Beetroot
Equal quantities of beetroot and Delhi carrot pressure cooked and mashed. In the tadka added butter, hing, pepper, salt, ajwain, coriander powder, ginger powder and garlic powder. Added cream and water, brought to boil. Garnished with coriander and mint leaves.
Pumpkin
Add oil and fry one small onion and 4 pods of garlic. Add pumpkin pieces and pressure cook. Blend and add lots of water and bring to boil. In the tadka add butter, hing, salt and peer. Garnish with cream, coriander leaves and mint leaves.
Masoor dal
Pressure cook masoor dal with one small onion and tomato. Mash, add lots of water. In the tadka add hing, ajwain, salt, pepper, oregano, coriander powder and kashmiri chilli powder and bring to boil for 2 to 3 mins. Garnish with coriander leaves and mukhwas
Palak
Add 200g Palak and 2 tbsp of yellow moong dal to a pressure cooker. Mash once done, add water and cream and bring to boil Add butter, hing, Ajwain, salt, pepper and coriander powder as tadka.
Sweet corn
Boil 1 sweet corn in the cooker. Remove half of the kernels after boiling. Mash the rest and add back the removed kernels and some spring onion. Add lots of water and some broth powder and bring to boil. Add cream and boil for a bit. Temper with butter, salt, pepper and hing.
