Paneer
Paneer Butter Masala
1. Marinate the paneer with curd, salt, turmeric, chilli powder, coriander powder and leave it in the fridge. Note that there is no besan or ginger garlic added. I marinated it overnight.
2. In a kadai, add butter and chopped tomatoes and ginger garlic paste and cook with closed lid until soft.
3. Puree the cooked tomatoes.
4. In the same kadai, lay the paneer in a single layer and cook until both sides are slightly crispy. Take them out into a container.
5. Add more butter to the kadai and add slit green chillies. Fry for a bit. Add the pureed tomatoes, add salt, turmeric, kashmiri chilli powder and garam masala and fry until the gravy leaves oil.
6. Add water, paneer pieces, kasuri methi and cook with closed lid until oil floats on top. Remove and garnish with coriander and fresh cream.
Chatpata Paneer
1. Marinate paneer with curd, salt, chilli powder, turmeric, aamchur, coriander powder, cumin powder, besan for atleast 30 mins.
2. On a tawa arrange the paneer pieces and add oil around and cook on low flame. After one side is cooked, turn sides
Shaahi Paneer
1. Soak the paneer slab in luke warm water for atleast 10 mins.
2. In a kadai, add oil, cashew, onion and salt and cook until done. Grind this into a paste.
3. Add more oil in the kadai, add the dry masalas and fry. Add slit green chillies and ginger garlic paste and fry until the raw smell is gone.
4. Add the ground paste, water, turmeric, coriander powder and bring to boil. Add curd and mix well and cook.
5. Once done, add the thinly sliced paneer and cream. Adjust the taste. Do not add garam masala or chilli powder. Adjust with coriander powder if needed. Slit raw green chillies and add. Cook with closed lid until gravy thickens. Add kasuri methi and curry leaves powder.
Paneer Tikka
1. Take a bowl of warm water and soak the paneer in it for 2 mins. Then grate the paneer.
2. Finely chop onions and green chillies and add to the grated paneer. Add salt, chilli powder, turmeric, coriander powder, cumin powder, aamchur, curry leaves crushed, finely chopped mint leaves and mix everything together.
3. Make small tikkis and fry on a tawa with little oil.
