Ice creams
Avocado ice cream
- Take two medium Avocados, drizzle juice from half a lemon and mash into a paste. Add a 400ml can of condensed milk and mix well. Add 1.5 tsp of vanilla essence.
- Beat two cups of chilled whipping cream until it doubles up and forms soft peaks. Take a part of the whipped cream and mix it into the Avocado mash. Add a pinch of green food colour.
- Mix rest of the whipped cream and the mash and beat into a smooth mixture. Adjust the taste and set overnight. For this dessert, I set the ice cream in a spherical mould.
- Crush the Oreos to make the soil.
- Make the caramel, wait until it cools down slightly and draw the desired pattern on a parchment paper.
- Assemble and enjoy!!!
Strawberry
Melt 250g of Mapro strawberry jam in the microwave. Mix that with condensed milk. Then mix it with the whipped cream. No sugar needed. Because there is no additional sugar, the texture of the ice cream is smooth like gelato even after it is set.
When using tropolite, skip the jam. Add strawberry essence and 200ml condensed milk for 2 cups of tropolite. Add a pinch of color
Honey and Fig
Soak 250g of figs in hot water for over an hour. Coarse grind 2/3 of the figs. Cut the remaining 1/3 into small pieces. Whip 1.5 cups of whipping cream until volume triples. Add the ground figs and 1/4 cup honey and whip again. Add 200ml condensed milk part by part to adjust the sweetness. Pour the mixture into a container and sprinkle the cut figs on top. Let it set in the freezer. After 2 hours mix so that the fig pieces are spread all over the ice cream.
Butterscotch
Made with 1 cup whipped cream, 200 ml Amul condensed milk and 1/2 tsp butterscotch essence. After taking the whipped ice cream into a setting bowl, crush some chikki and spread on top. After 2 hours take out of the freezer and mix it up well and leave it to set overnight.
Paan
Take 1 litre of Amul whipping cream and whip until it doubles in volume. Add 800 ml of condensed milk, some paan essence, paste from 5 betel leaves, 500g rose gulkand and mix well. Adjust the sweetness if needed. After the ice cream sets for 3 hours, add mukhwas and tutti frutti and mix well. Set the ice cream overnight.
Mocha
In the empty condensed milk tin, add 5 spoons cocoa powder, and 2.5 spoons instant coffee powder. Add some of the cream mixture and mix well to make sure there are no lumps. Add the cocoa mixture to the ice cream base and mix with a big spoon. Taste and adjust if more cocoa or coffee is needed.
Coffee
For 1 litre of cream, 4 to 5 tbsp of instant coffee powder. First add 4 and taste and then adjust. Needs to be mixed in the empty condensed milk tin. Use Dlecta’s non-dairy cream for a gelato like texture.
Choco Chip
For 1 litre cream, 1 tsp vanilla essence and 1 cup diced dark chocolate.
