Choco walnut cookies with coconut
- Cookies do not get better than this.
- Take 1 3/4 cup grated coconut and toast until flaky and light brown
- Take 1 3/4 cup coarsely chopped walnuts and roast for a bit.
- Add 1 cup softened butter, 1/2 cup granulated sugar, 3/4 cup brown sugar and mix well until frothy.
- Add 2 eggs and mix well. Add 1 tsp vanilla essence and mix some more.
- Sift 1 3/4 maida, 1/4 cup cocoa powder, 1 tsp baking soda, 1/2 tsp baking powder, 1/2 tsp salt and mix well
- Add 2 cups coarsely chopped milk chocolate and mix.
- Add the coconut and walnuts and mix. Leave the dough in n the fridge overnight.
- Pre-heat the oven to 175C and make small balls of cookie dough. Press lightly. Bake for 18mins.
Choco Chip Cookies
- The recipe makes 50+ cookies.
- Sift together 2 cups maida, 1/2 tea spoon baking soda, 1/2 teaspoon salt, 2 teaspoon corn floor. Mix well.
- Take 3/4 cup melted butter, 1/2 granulated sugar, 3/4 cup brown sugar in a large bowl and whisk until combined.
- Add 1 large egg, and 1 egg yolk, 2 teaspoon vanilla essence and whisk more.
- Mix the dry ingredients and add 1 1/2 cups chocolate chips and mix. Do not over mix.
- Chill the dough for at least 2 hours, preferably overnight.
- Pre-heat the oven to 165C
- Drop rounded balls of dough on a baking tray.
- Bake for 15 mins.

Coconut Cookies
- Blend 1 full dry coconut in a mixer. Dry roast until it changes color and loses all the wetness. The coconut should be powdery and brittle.
- Pre-heat over to 170C
- Sift 2 1/4 cups maida, 1 tea spoon baking soda, 3/4 teaspoon salt in a big bowl.
- Take 1 cup butter softened to room temperature, and beat until it turns creamy.
- Add 3/4 cup brown sugar, 3/4 cup granulated sugar and beat some more until the mixture turns light and fluffy.
- Add 2 large eggs one at a time and beat well.
- Add 1 1/2 tea spoons vanilla essence and beat well.
- Add the dry ingredients and fold until just mixed. Add 1 3/4 cups of coconut and fold.
- Place the remaining dry coconut in a bowl. Roll the dough balls in the dry coconut, place the cookie dough balls on a baking tray and press slightly.
- Bake for 12 mins.

Gems cookies
- Sift together 2 cups maida, 1/2 tsp salt, 1/2 tsp baking soda.
- Take 3/4 cup melted butter, 1/2 cup granulated sugar, 3/4 cup brown sugar and whisk well.
- Add 1 full egg and 1 egg yolk and whisk more.
- Add 2 tsp vanilla essence and whisk.
- Fold in the dry ingredients and 1 cup gems.
- Chill the dough at least for 2 hours. Roll the dough into balls and stick some gems and slightly flatten on a baking tray.
- Pre-heat the oven to 165C
- Bake for 12 mins.

Tiranga cookies
Use the choco chip cookie recipe from above. Take bits of each batter and roll into a ball and bake.
Red Velvet Choco Chip
- Makes 20 cookies.
- Sift 1 1/3 cup maida, 3 tbsp cocoa powder, 1/2 tsp baking soda, 1/4 tsp salt. Mix well.
- Take 1/2 cup butter softened to room temperature, add 1/2 cup brown sugar, 1/2 cup granulated sugar and beat until it turns fluffy.
- Add 1 large egg, 2 tsp vanilla essence, red food color and beat well. This recipe requires quite a bit of red color.
- Add dry ingredients, 1 cup white choco chips and fold well.
- Refrigerate the dough for at least 2 hours
- Pre-heat the oven to 180C
- Roll the dough into balls, slightly flatten and bake for 10 mins.
