Beerakaya (Ridge gourd)
Beerakaya and Scranbled egg
- In a kadau add oil, red chillies and tadka.
2. Add onions and fry until cooked.
3. Add the roughly chopped ridge gourd.
4. Cover and cook until the water nearly evaporates.
5. Add salt and turmeric and mix. At this point there is no water but there is moisture.
6. In a separate kadai, scramble eggs with salt and chilli powder.
7. Mix the scrambled eggs into the ridge gourd curry, turn the heat to high and add garam masala. Adjust the salt and spice level.
8. Cook without lid on high flame until the dish leaves oil.
Beerakaya Senagapappu (Chana dal)
1. Soak chana dal for 30 mins
2. Heat oil in a pan, add tadka, and the soaked chana dal and fry for a bit.
3. Add onions, geen chillies and fry.
4. Add ginger garlic paste and salt and fry until cooked.
5. Add the beerakaya pieces and cover.
6. Once the water from beerakaya is semi done, add turmeric, chilli powder and garam masala.
7. Cook on high flame until the water evaporates.
