Torta Caprese
- Pre-heat the oven to 175C
- Prepare a 9X13 pan lined with butter paper.
- Separate 12 eggs. Beat the egg whites until they become foamy. Add 1 cup sugar in iterations beating until the whites turn to stiff peaks. Refrigerate the mixture.
- In another bowl, take 2.5 cups of unsalted butter at room temperature. Add 1.25 cups of sugar and beat until the mixture turns light.
- Add the 12 egg yolks one by one wile beating on medium.
- Melt 3 cups of chopped dark chocolate and add to the butter mixture.
- Add 7 cups of fine almond flour one cup after the other, gently folding with a spatula.
- Add the egg whites in 3 instalments, folding gently.
- Add the mixture to the pan and bake for 50 mins. A toothpick inserted needs to come back with a few wet crumbs.
- Cool the cake for 1 full hour, dust liberally with powdered sugar before cutting. Tastes best the next day. Could be clubbed with whipped cream or ice cream.
Chocolate truffle cake
- Pre-heat the oven to 180C and prepare a 9x13 pan.
- Put a glass of water on the stove to heat
- In a big bowl take 2 cups maida, 2/3 cup cocoa powder, 1 tsp baking soda, 1/2 tsp baking powder, 1.8 cups sugar, 1/2 tsp salt and mix well.
- In another bowl take 1/2 cup oil, 4 eggs, 1 tsp vanilla extract, 1/2 cup sour cream and mix well.
- Now mix the wet and dry ingredients and add 1 cup hot water. Mix well.
- Pour the batter into the pan and bake for 30mins.
- In the meantime, add 200g dark chocolate and 200g milk chocolate, 1 cup whipping cream to a bowl. Keep microwaving and mixing until the chocolate melts completely.
- Add 2 tbsp cocoa powder and 2 tbsp honey and mix well.
- In a separate bowl, whip 2 cups whipping cream until stiff peaks.
- Mix the chocolate mix into the whipped cream and whip some more.
- Once done, put the ganache in the fridge.
- After the cake completely cools, cut to make two layers.
- Mix sugar in 1/2 cup warm water and once dissolved, add the sugar syrup to the two layers and let it get absorbed.
- Later the cake adding the ganache and let it set over night in the fridge.
- In the morning, take 100g of milk chocolate, 100g of dark chocolate, add 0.7 cups of whipping cream and microwave until the chocolate melts. Add 2 tsp of honey and mix well.
- Pour on the cake and refrigerate for at least 2 hours
Kladdkaka
- Pre-heat the oven to 180C and line a 9X13 pan.
- Take 1.25 cups of softened butter and add 2.5 cups of sugar and melt in the microwave, whisk in between. The sugar should have slightly melted.
- Add 1.6 cups of flour, 1 cup cocoa powder, 0.5 tsp salt and mix well.
- In a separate bowl add 6 eggs and whisk slightly until mixed. Add 2 tsp vanilla essence and mix more.
- Add to the batter and mix slightly.
- Bake for 30 to 35 mins. The top should set and the insides should be fudgy.
